Autumn Vegetable Soup


Serves: 8


64 oz vegetable broth

1 cup carrots, diced

1/2 cup mushrooms, sliced

1 cup butternut squash, cubed

1 cup kale

1 cup spinach

1/2 cup white onion, diced

1/2 cup eggplant, cubed

1 green bell pepper, cubed

1 can sweet corn, drained

1 tbsp onion powder

2 tbsp Italian seasoning

1 tbsp cilantro leaves, dry

1 tbsp white pepper

2 cups egg noodles, dry

Directions: prep all ingredients and place everything expect for the noodles in a large saucepan. Cook on medium for 1 hour, occasionally stirring. Add noodles and cook on medium for 15- 20 minutes. Enjoy!
