Easy Pad Thai Recipe

1 package rice noodles (12 oz)

1 pound baby shrimp, thawed

2 tbsp vegetable oil

3 large eggs

2 tbsp asian fish sauce

1 tbsp white wine vinegar

2 tbsp coconut chips

1/8 crushed red pepper

2 tbsp sugar

2 cups bean sprouts

1 tbsp chopped scallions/or cilantro (preference)

1 tbsp chopped peanuts

1/4 lime, wedge

1/4 lemon, wedge



  1. Soak rice noodles in cold water for 40-50 minutes. Drain and set aside.
  2. Heat oil in skillet and cook shrimp until heated thoroughly, 10 minutes.
  3. Crack eggs into the pan and cook until firm.
  4. Add softened noodles, vinegar, fish sauce, sugar, coconut chips and red pepper.  Mix while cooking, until noodles are tender. Add bean sprouts, and cook for 3 minutes.
  5. Plate mixture and garnish with coconut chips, scallions/or cilantro, peanuts, lime and lemon wedge. Enjoy!
