Sweet Potato Casserole Recipe


Sweet potato casserole is one of my favorite holiday dishes. Every since I was a little girl, I’ve made it with my grandma for every major holiday. I even made it for my significant other’s family and it was a hit.

Ingredients for filling:

4 large sweet potatoes, washed, peeled, and halved


3 tbsp unsalted butter

1/2 cup coconut milk

1/4 cup brown or coconut sugar

1 tsp vanilla extract

2 large eggs

Ingredients for topping:

1 bag of mini marshmallows

3/4 cup of chopped pecans



  1. Place potatoes in a large pan and boil until soft. Drain water and transfer to a large bowl.
  2. Preheat oven to 375 degrees Fahrenheit. Whisk together all the ingredients for the filling and transfer to greased baking dish.
  3. Sprinkle with marshmallows and pecans. Bake for 25-30 minutes until golden brown. Serve hot.
