Sweet potato casserole is one of my favorite holiday dishes. Every since I was a little girl, I’ve made it with my grandma for every major holiday. I even made it for my significant other’s family and it was a hit.
Ingredients for filling:
4 large sweet potatoes, washed, peeled, and halved
3 tbsp unsalted butter
1/2 cup coconut milk
1/4 cup brown or coconut sugar
1 tsp vanilla extract
2 large eggs
Ingredients for topping:
1 bag of mini marshmallows
3/4 cup of chopped pecans
- Place potatoes in a large pan and boil until soft. Drain water and transfer to a large bowl.
- Preheat oven to 375 degrees Fahrenheit. Whisk together all the ingredients for the filling and transfer to greased baking dish.
- Sprinkle with marshmallows and pecans. Bake for 25-30 minutes until golden brown. Serve hot.
